Tossed Greens with Apples, Walnuts and Blue Cheese

8 c assorted greens
1 each Red Delicious and green apple cored, and thinly sliced
1 T fresh lemon juice
2/3 c walnut pieces, toasted in a 325° oven 8-10 minutes until golden
1/2 c crumbled blue cheese
4 T minced chives
Recipe
Place greens in large salad bowl. Toss apple slices with lemon juice. Add apples and 1/2 of the walnuts to the salad. Add the dressing, and toss to coat.
Divide among 4 chilled plates. Sprinkle top of each salad with walnuts and chives.
Blue Cheese Vinaigrette
2/3 c olive oil
1/4 c white vinegar
1/2 tsp sugar
2 T each finely minced shallots and Dijon mustard
1/4 c finely crumbled blue cheese
pinch cayenne pepper
Whisk together the oil, vinegar, sugar, shallots, and mustard until smooth. Stir in the cheese. Season with a pinch of cayenne.
