Waldorf Salad With Roasted Chicken

2 Granny Smith apples
1/2 cup mayonnaise
1 teaspoon plus 3 tablespoons apple cider vinegar
2 tablespoons apple juice
1 tablespoons plus 2 teaspoons Dijon mustard
Salt and pepper
2 1/2-pound cold roast chicken, meat removed from bones and thinly shredded
1 red Delicious apple, cored and thinly sliced
2 large celery ribs, thinly sliced (about 1 cup)
1/2 cup toasted walnuts, chopped
1/2 cup walmut oil or extra-virgin olive oil
10 cups coarsely chopped romaine lettuce Recipe
To make the dressing:
Peel, core and coarsely chop 1 Granny Smith apple. Place in blender or food processor; process until smooth. Add mayonnaise, 1 teaspoon of the vinegar, all of the apple juice and 1 tablespoon of the mustard; process until smooth. Season to taste with salt and pepper; set aside. Core and thinly slice the remaining Granny Smith apple, place in a medium bowl. Add chicken, red apple, celery, walnuts and reserved dressing; toss to coat. Set Aside.
To make the vinaigrette:
In a large bowl, whisk together the remaining vinegar, the remaining mustard and all of the oil;season to taste with salt and pepper. Add lettuce; toss gently. Divide lettuce among 4 dinner plates; top with chicken mixture. Serve.
