    Potato, Bacon And Blue Cheese Soufflé

    2 tablespoons butter, plus additional for coating baking dishes
    2 2/3 cup mashed potatoes (see note)
    1 1/3 cups milk
    1/3 cup heavy cream
    3/4 cup grated Parmesan
    1/2 cup crumbled blue cheese
    2 eggs, separated
    3 slices bacon, cooked Crisp and crumbled
    1 teaspoon salt
    1 teaspoon fresh thyme or 1/2 teaspoon dried
    1/4 teaspoon pepper

    Recipe

    1. Heat oven to 375 degrees.

    2. Generously butter bottoms and sides of 6 individual (4-to 5-ounce) soufflé dishes or 1 large (5- to 6-cup).

    3. Heat mashed potatoes with milk according to package directions.

    4. Remove from heat, stir in cream and 2 tablespoons of the butter. Stir in Parmesan cheese, blue cheese, egg yolks, bacon, salt, thyme and pepper.

    5. Using an electric mixer, beat egg whites until they form soft peaks. Gently fold egg whites into potato mixture. Spoon into prepared dishes or dish. Place on middle rack of oven. Bake individual soufflés 30 minutes(40 to 50 minutes for large soufflé. Makes 6 servings.

    Note: Half of a 22- ounce package of frozen mashed potatoes can be used.
