    2 cups chopped green pepper
    2-1/2 cups chopped onion
    3 to 4 garlic cloves
    2 tablespoons vegetable oil
    4 15-ounce cans pinto beans or left over cooked beans
    2 28-ounce cans sliced or chopped tomatoes, juice included
    1 whole chicken, 3 pounds
    1-1/2 tablespoons chili powder or to taste
    2 teaspoons dried cilantro
    1 teaspoon red pepper
    1 teaspoon salt

    Recipe



    In large soup pot, cook chicken in just enough salted water to cover. When chicken is done, remove it from broth, debone and cut into bite size pieces, return to broth and add the following: green peppers, onions, and finally chopped garlic sautéed in oil until tender, drained pinto beans, tomatoes, chili powder, cilantro, pepper, and salt. Stir mixture, bring to boil, then reduce mixture to simmer for 25 minutes.
