MEDITERRANEAN THREE-BEAN SOUP (SBD)

1/3 cup olive oil
2 leeks, cleaned and chopped coarsely
2 stalks celery, chopped coarsely
2 cloves garlic, minced
4 cups chicken stock or broth
1 teaspoon thyme
1 teaspoon marjoram
1 bay leaf
Pepper, to taste
1 1/2 cups cooked kidney beans
1 1/2 cups cooked garbanzo beans
1 pound green beans, trimmed and strings removed, snapped into 1-inch pieces Recipe
Heat olive oil over moderate heat in large pot. Add leeks, celery and garlic. Saute 3-4 minutes.
Add remaining ingredients, except green beans. Bring soup to boil, then lower heat and simmer 20 minutes. Add green beans; simmer for 15-20 minutes more until green beans are cooked but still crunchy.
Makes 4 servings.
