    PROVENCE WHITE BEAN WITH SPINACH SOUP (SBD)

    2 tablespoons olive oil
    1/2 cup diced carrot
    1/2 cup diced red bell pepper
    1/2 cup diced onion
    1 teaspoon grated lemon rind
    1/4 teaspoon ground cumin
    1/4 teaspoon cinnamon
    1/4 teaspoon cayenne pepper (optional)
    1/4 teaspoon salt
    Freshly ground black pepper
    8 ounces lean ground beef or lamb, broken up
    1-2 cloves garlic, crushed
    2 13 3/4-ounce cans chicken broth
    1 16-ounce can navy beans, rinsed and drained
    8 cups fresh spinach leaves (about 12 ounces), with stems removed and slivered
    1 tablespoon fresh lemon juice

    Recipe

    In soup pot, heat olive oil. Saute carrot, red pepper, onion, lemon rind, spices, salt and pepper 5 minutes.

    Stir in ground meat and garlic; cook 5 minutes. Stir in broth and heat to simmer. Stir in beans; cook 10 minutes. Skim off fat, then stir in spinach and simmer 10 minutes. Stir in lemon juice.

    Serve hot.
