    1 pound ground turkey
    1/4 cup olive oil
    1 green pepper, seeded and chopped
    1 large onion, chopped
    1-2 cloves garlic
    2 tablespoons chili powder
    1/2 teaspoon ground cumin
    1 teaspoon paprika
    2 tablespoons red wine vinegar
    4 cups water or canned chicken broth
    2 cups chopped or diced drained tomatoes
    2 cups canned white beans or red kidney beans
    Garnishes: Shredded lettuce, sliced avocado, shredded Monterey Jack or reduced-fat cheese

    Brown turkey in large kettle in 2 tablespoons olive oil, crumbling with fork until cooked well. Drain turkey and reserve.

    Add remaining olive oil to kettle and heat over moderate heat; add green pepper, onion and garlic. Saute until vegetables are tender. Add chili powder, cumin, paprika, red wine vinegar and water. Cover and simmer for 45 minutes, stirring often.

    Add tomatoes; cook for 15 minutes. Add beans and reserved turkey; cook for additional 10 minutes. (Add some mashed beans if thicker consistency is desired, using fork or potato masher.)

    Garnish with shredded lettuce, sliced avocado, shredded Monterey Jack or reduced-fat cheese.

    Makes 10-12 servings.
