List of Ingredients
2 lb boneless skinless chicken breasts
4 cans chicken broth
3 cloves garlic chopped
14 oz can Italian or chili style diced tomatoes
1 med zucchini not peeled sliced in thin rounds
1 med carrot sliced in thin rounds
1 lge red bell pepper cut in 1/2" cubes
14 oz can corn including liquid
2-3 tbs chili pdr
15 oz can ranch beans including liquid
1 1/2-2 tbs cumin
4 green onions sliced in thin rounds
1/2 cup fresh cilantro chopped Recipe
Chop the garlic. Cut chicken into cubes,put in soup pot. Add chicken broth,tomatoes including liquid and garlic. Bring to a boil,reduce heat and simmer for 20 min. Prepare veggies and after the 20 min is over add to the pot. Simmer another 7-10 until they are tender. Add corn and beans to mixture,add spices. Simmer 10 min stirring frequently. Turn off heat add onions and cilantro. Let sit for a few minutes,adjust seasonings if necessary.
