    1 tablespoon olive oil
    1 medium onion, finely chopped
    1/2 cup canned roasted red peppers, cut into thin slices
    1 clove garlic, finely chopped
    Salt and freshly ground black pepper, to taste
    1/2 cup canned whole tomatoes
    1 teaspoon grated lemon rind
    2 tablespoons drained capers
    1/2 pound green beans, trimmed

    Recipe



    In a skillet heat the oil and cook the onion for 8 minutes or until soft but not brown. Add the red peppers, garlic, salt, pepper, tomatoes, lemon rind and capers. Let the mixture simmer gently, stirring occasionally, for 10 minutes or until it is thick and pulpy.

    Meanwhile, drop the beans into a saucepan of rapidly boiling water and let them cook steadily for 5 to 7 minutes or until tender but stll have some bite. Drain the beans and add them to the pepper sauce.

    Cook 1 minute, turning the beans in the sauce. Add more salt and pepper if you like and serve at once or cover tightly and refrigerate overnight. Let the beans come to room temperature before serving. Serves two.
