    Southwest-Spiced Sweet Onion Rings

    List of Ingredients




    6 servings

    2 large sweet onions
    1 egg
    1 1/2 cups flour
    1/2 cup buttermilk
    12 ounces beer
    2 tablespoons peanut oil
    2 teaspoons salt
    1 teaspoon pepper
    1 teaspoon ground cumin
    1 teaspoon chili powder
    1/2 teaspoon cayenne pepper
    peanut oil for frying

    Peel the onions and slice into 1/2-inch rings. Remove the medium to large rings and set aside. Discard the centers of the onions or reserve them for another use. Lightly beat the egg in a large mixing bowl. Whisk in the remaining ingredients until mixture is smooth.

    Heat 2 inches of oil in a large frying pan to 375 degrees. Dip the onion rings into the batter and carefully drop into the hot oil. Fry one layer at a time until lightly browned. Drain on paper towels. Keep warm in a 200-degree oven until ready to serve.
