Spicy Honey-Rum Salmon

List of Ingredients
1/4 c. dark rum
1/4 c. honey
1/4 c. lime juice
3 tblspns fresh cilantro,chopped
2 crushed garlic cloves
1-1/2 tspns grated fresh ginger
1/2 tspn salt
1 tspn coarse ground pepper
1 tblspn olive oil
1 tspn scotch bonnet or habanero pepper, minced
4-6 oz salmon steaks
4 lime wheels
Recipe
In large bowl, mix together rum, honey, lime juice,
cilantro, garlic, ginger, and salt. Remove bones from salmon, and place in marinade for 2 hours. Pat dry. Sprinkle with pepper and chilies. Heat oil in large skillet on medium-high. Cook salmon skin side up 3-4 minutes. Turn fillets over and reduce heat to low for 5 minutes. Garnish with Lime wheels and cilantro sprigs.
