    4 Cornish game hens
    salt and pepper
    1 pkg (10 oz) frozen chopped spinach, thawed
    5 Tbsp butter
    1/3 cup chopped onion
    1 clove garlic, finely chopped
    1 cup coarsely chopped fresh mushrooms
    1 cup ricotta cheese
    1/4 cup sour chream
    1/8 tsp nutmeg

    Wash hens inside andout, pat dry. Season with salt and pepper. Squeeze
    spinach to remove as much moisture as possible.

    Melt 2 Tbsp of the butter in a frying pan. Add onion and garlic; saute
    until tender, about 2 minutes. Add mushrooms; cook until liquid
    evaporates. Add spinach and cook for 1 minute. Remove from heat and
    let cool slightly. Add ricotta cheese, sour cream, 1/4 tsp salt, 1/8
    tsp pepper, and nutmeg; mix well.

    Preheat oven to 350. Stuff hens loosely with spinach mixture. Fold
    wings back and tie legs together. Place hens, breast side up, in a
    large shalllow baking pan. Melt remaining 3 Tbsp butter and baste
    hens.

    Bake, basting frequently, for 1 hour 15 minutes.
