- 1 can black beans (rinsed & drained)
- 16 oz. pkg. frozen corn (rinsed & drained)
- 1/2 C. fresh cilantro, chopped
- 1/3 C. purple onion, minced
- 1/3 C. green onion, chopped
- 3/4 C. tomato, chopped
- 2 jalapenos (or other peppers), minced
- 6 T. lime juice
- 5 T. vegetable oil
- 1 1/2 t. cumin
- salt and pepper to taste
