    Pinehurst Muffins

    List of Ingredients


    • 4 C. flour
    • 2 1/2 C. sugar
    • 4 t. soda
    • 4 t. cinnamon
    • 1 t. salt
    • 4 C. grated carrots
    • 1 C. raisins
    • 1 C. chopped pecans
    • 1 C. coconut
    • 2 apples, peeled, cored, and grated
    • 6 eggs
    • 2 C. mazola
    • 4 t. vanilla


    Instructions


    1. In a large bowl, sift first 5 ingredients.

    2. Stir in remaining next 5 ingredients.

    3. In a bowl, beat eggs, then add mazola and vanilla. Stir in flour mixture until just combined.

    4. Spoon batter in well-oiled muffin tins.

    5. Bake at 350 degrees for 15 minutes, until top of muffin springs back when touched. Let cool 5 minutes. Turn out on rack.

    6. (Makes 36 regular size muffins)
