Pinehurst Muffins

List of Ingredients
- 4 C. flour
- 2 1/2 C. sugar
- 4 t. soda
- 4 t. cinnamon
- 1 t. salt
- 4 C. grated carrots
- 1 C. raisins
- 1 C. chopped pecans
- 1 C. coconut
- 2 apples, peeled, cored, and grated
- 6 eggs
- 2 C. mazola
- 4 t. vanilla
Instructions
- In a large bowl, sift first 5 ingredients.
- Stir in remaining next 5 ingredients.
- In a bowl, beat eggs, then add mazola and vanilla. Stir in flour mixture until just combined.
- Spoon batter in well-oiled muffin tins.
- Bake at 350 degrees for 15 minutes, until top of muffin springs back when touched. Let cool 5 minutes. Turn out on rack.
- (Makes 36 regular size muffins)
