Pastel de Tamale

List of Ingredients
- 1/2 C. onion, chopped
- 1 T. oil
- 1 t. margarine
- 1/2 lb. ground beef
- 1 C. canned tomatoes and juice
- 3/4 C. wh. kernel corn (drained)
- 1 egg
- Whole olives (optional)
- 1/2 t. chili powder
- 1/2 C. milk
- 1/2 t. salt (optional)
- 1/2 C. yellow corn meal
- 1/2 C. grated cheese
Instructions
- Saute' onion in oil and margarine.
- Add ground beef and cook until meat is browned.(Discard excess fat.)
- Add tomatoes, juice and corn.(Whole olives may be added.)
- Beat egg in bowl.
- Add chili powder, milk, salt, and corn meal.
- Stir into meat mixture and stir constantly until mixture begins to thicken.
- Simmer 15 minutes.
- Pour into oiled casserole.
- Top with grated cheese.
- Bake 350 degrees for 30 minutes.
