Scallops Baked with Mushrooms

List of Ingredients
- 1 lb. scallops
- 3 oz. butter
- 1/2 lb. fresh mushrooms, sliced
- 3 stalks celery, diced
- 1/2 small onion, finely chopped
- 1/2 green pepper, minced
- 1/8 t. basil
- 2 C. white sauce
- 1/2 C. cracker crumbs
- 4 T. cheddar cheese, grated
- parsley sprigs
- White Sauce:
- 2 oz. butter
- 2 T. flour
- 1/4 t. salt
- 1 C. milk
- 1/8 t. pepper
Instructions
- Wipe scallops with a damp cloth and set aside.
- Melt 2 oz butter in a heavy saucepan.
- Add next 5 ingredents.
- Simmer gently 10 minutes until celery and mushrooms are tender, but not soft.
- Prepare white sauce.
- Add scallops to mushroom mixture; mix well.
- Heat 5 minutes and then add the white sauce.
- Pour mixture into 1 1/2 qt. buttered casserole.
- Cover wth cracker crumbs, then grated cheese; dot with remaining 1 oz. butter.
- Bake at 350 degrees for 25 minutes or until golden.
- Garnish with parsley.
- White Sauce:
- Melt butter; gradually add flour, stirring constantly.
- Add salt and pepper and slowly pour in milk.
- Stir sauce continually until it is very smooth and thick.
