French Onion Soup

List of Ingredients
- 5 C. yellow onions, thinly sliced
- 5 T. butter
- 2 T. canola oil
- 1 T. Dijon mustard
- 3 T. Flour
- 1 t. salt
- 1/4 t. sugar
- 1 C. dry white wine
- 2 qts. boiling beef broth
- 1 1/2 C. Gruyere cheese, grated
- French bread rounds, toasted
Instructions
- Heat oil and butter, add onions and saute' until dark brown, about 25 minutes.
- Stir in flour and mustard, cook for 2 minutes.
- Add salt, sugar, broth, and wine and simmer for 30 minutes.
- Pour soup into individual ramekins.
- Place toasted rounds on top and sprinkle with cheese.
- Heat at 475 until cheese melts, then broil until slightly browned.
