Tomato Basil Soup

List of Ingredients
- 4 C. fresh roma tomatoes, peeled, cored, and chopped
- 2 C. tomato juice
- 2 C. vegetable stock ( can substitue chicken stock)
- 12 to 14 leaves fresh basil
- 1 C. heavy cream
- 1 stick sweet unsalted butter
- salt to taste
- 1/4 t. cracked black pepper
Instructions
- Combine tomatoes, juice and stock in saucepan.
- Simmer 30 minutes.
- Puree, along with the basil, in small batches, in blender or food processor.
- Return to saucepan and add cream and butter, while stirring, over low heat until well blended and heated thoroughly.
