    Tortellini Soup

    List of Ingredients


    • 1 lb. smoked sausage
    • 1 C. chopped onion
    • 2 garlic cloves, minced
    • 5 C. beef broth
    • 1 C. water
    • 2 C. tomatoes (fresh or canned - chopped or diced)
    • 8 oz. tomato sauce
    • 1 medium green pepper, cut into small pieces
    • 1 C. zucchini, sliced
    • 3 T. parsley
    • 1/2 t. basil
    • 1/2 t. oregano
    • 2 C. tortellini, fresh or dried (9 oz. pkg.)
    • 1 C. carrots, sliced thin
    • salt & pepper to taste


    Instructions


    1. Cut sausage into chunks, brown with onion and garlic.

    2. Add all other ingredients except zucchini and tortellini.

    3. Cook for 40 minutes.

    4. Add tortellini and zucchini.

    5. Cook another 30 minutes.

    6. Spoon into bowls and sprinkle with parmesan cheese.

    7. (I've also done this in a crock-pot instead of on the stove. Cook as above on low for a few hours and then add tortellini and zucchini about 1 1/2 hours before you're ready to eat.)
