Tortellini Soup

List of Ingredients
- 1 lb. smoked sausage
- 1 C. chopped onion
- 2 garlic cloves, minced
- 5 C. beef broth
- 1 C. water
- 2 C. tomatoes (fresh or canned - chopped or diced)
- 8 oz. tomato sauce
- 1 medium green pepper, cut into small pieces
- 1 C. zucchini, sliced
- 3 T. parsley
- 1/2 t. basil
- 1/2 t. oregano
- 2 C. tortellini, fresh or dried (9 oz. pkg.)
- 1 C. carrots, sliced thin
- salt & pepper to taste
Instructions
- Cut sausage into chunks, brown with onion and garlic.
- Add all other ingredients except zucchini and tortellini.
- Cook for 40 minutes.
- Add tortellini and zucchini.
- Cook another 30 minutes.
- Spoon into bowls and sprinkle with parmesan cheese.
- (I've also done this in a crock-pot instead of on the stove. Cook as above on low for a few hours and then add tortellini and zucchini about 1 1/2 hours before you're ready to eat.)
