    Honeyed Curried Carrots

    1 tablespoon butter or margarine
    1 pound carrots, peeled, trimmed and cut into 1/4-inch rounds
    2 teaspoons curry powder
    1/2 cup orange juice
    1 tablespoon honey
    salt, to taste
    freshly ground pepper, to taste
    Finely chopped parsley or coriander, for garnish

    Recipe



    Heat the butter in a medium frying pan over medium-high heat. Add the carrots and curry powder and cook, stirring for 30 seconds. Add the orange juice and honey. Bring the mixture to a boil and cook for 3 minutes.

    Reduce the heat to low and cook for an additional 2 minutes until the liquid in the pan is almost evaporated and the carrots are crisp-tender. Season with salt and pepper to taste and sprinkle with chopped parsley. Serve immediately.
