    The Best Blueberry Bran Muffins

    List of Ingredients


    • 1 1/2 cups bran cereal (i.e. All-Bran or 100% Bran)
    • 1 1/2 cups Milk, soured* see final comments (or buttermilk)
    • 2 cups all-purpose flour
    • 2 tsp baking powder
    • 1 tsp ground cinnamon
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1/3 cup packed brown sugar
    • 1 egg
    • 1/3 cup fancy molasses
    • 1/4 cup Butter, melted
    • 2 cups frozen or fresh blueberries
    • If using frozen bluberries, do not thaw before adding to muffins in order to prevent the blue colour from discolouring the batter.


    Instructions


    1. Preheat oven to 350F (190C. Lightly butter or spray nonstick muffin pans or line with paper baking cups.

    2. In a large bowl, combine cereal with Milk; let stand for 10 min. n a seperate large bowl, combine flour, baking powder, cinnamon, baking soda and salt. Whisk brown sugar, egg, molasses and butter into cereal mixture; pour over dry ingredients and sprinkle with blueberries. Stir just until moistened.

    3. Spoon into prepared muffin pan. Bake for 25 to 30 min or until tops are firm to the touch.



    Final Comments


    *To sour Milk, spoon 4 tsp (20 mL) of lemon juice or white vinigar into measeuring cup; pour enough milk in to make 1 1/2 cups (375 mL). Let stand for 5 min then stir.
