The Best Blueberry Bran Muffins

List of Ingredients
- 1 1/2 cups bran cereal (i.e. All-Bran or 100% Bran)
- 1 1/2 cups Milk, soured* see final comments (or buttermilk)
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 1/3 cup packed brown sugar
- 1 egg
- 1/3 cup fancy molasses
- 1/4 cup Butter, melted
- 2 cups frozen or fresh blueberries
- If using frozen bluberries, do not thaw before adding to muffins in order to prevent the blue colour from discolouring the batter.
Instructions
- Preheat oven to 350F (190C. Lightly butter or spray nonstick muffin pans or line with paper baking cups.
- In a large bowl, combine cereal with Milk; let stand for 10 min. n a seperate large bowl, combine flour, baking powder, cinnamon, baking soda and salt. Whisk brown sugar, egg, molasses and butter into cereal mixture; pour over dry ingredients and sprinkle with blueberries. Stir just until moistened.
- Spoon into prepared muffin pan. Bake for 25 to 30 min or until tops are firm to the touch.
Final Comments
*To sour Milk, spoon 4 tsp (20 mL) of lemon juice or white vinigar into measeuring cup; pour enough milk in to make 1 1/2 cups (375 mL). Let stand for 5 min then stir.
