- 1 medium green bell pepper
- 1/2 medium onion
- 1 can Healthy Request condensed cream of Chicken soup
- 1 (10oz) can Rotel tomatoes
- 6 oz cubed chicken, cooked
- 4 corn tortillas
- 1/3 cup shredded Mexican cheese
- FatFree sour cream (optional)
Instructions
- Preheat oven 325°.
- Saute pepper and onion in skillet with pam.
- Add soup, Rotel tomatoes and chicken and simmer 3-5 minutes
- In a round 1.5 qt baking dish alternate layers of tortillas and soup mixture.
- Sprinkle cheese on top and back 35-40 minutes or until hot and bubbly.
- Serve with a dollop of sour cream on top.
