List of Ingredients
- 1 lb ground turkey
- 1/2 cup chopped onion
- 2 cloves minced garlic
- 3 cups cooked brown rice (without salt)
- 1/4 cup sliced black olives
- 2 tbsp Cilantro
- 1 (28oz) can tomatoes, undrained and chopped
- 1 (4 1/2oz) can chopped green chilies, undrained
- 1 (1 1/4oz) package taco seasoning mix
- Pam cookins spray
- 1 cup reduced-fat monterey jac k cheese
Instructions
- Preheat oven to 350°
- Cook first 3 ingredients in a large skillet over medium-high heat until beef is browned, stirring until it crumbles; drain and return to skillet.
- Stir in rice and next 5 ingredients
- Bring to a boil; reduce heat, and simmer uncovered for 10 minutes
- Spoon mixture into a 2qt backing disk coated with Pam.
- Bake uncovered for 15 minutes, sprinkles with cheese and bake 5 additional minutes or until cheese is melted.
