    Garden Vegetable Omelette

    List of Ingredients


    • 1/2 c fresh broccoli
    • 1/4 c onion, chopped
    • 1/4 c green peppers, chopped
    • 1/4 c tomatoes, chopped and seeded
    • 2 oz deli-sliced turkey, chopped
    • 1 1/2 c egg beaters
    • 1/2 c RF mozzarella


    Instructions


    1. Cut broccoli into bite-sized pieces. Steam until just tender.

    2. Spray skillet with cooking spray. Lightly sautee all vegetables and turkey over medium heat until just tender.

    3. Add in egg beaters. Cook until done, stirring frequently.

    4. Once on plate, top each serving with half of the mozarella. (Dish should be served piping hot, so microwave for a minute if necessary.)



    Final Comments


    YUM!! DH is about ready to propose all over again for this one! When you cut up the tomato, cut off the top, then give it a good squeeze. If you don't get rid of most of the seeds, then your omelette will come out a little wet. And, if you are married to a tomato-hater like I am, he just may tolerate the tomatoes (without the offending seeds)! This is VERY filling and makes a lot. I serve it with some fresh fruit and 2 slices of light toast. A HUGE breakfast for only 7 points!
