Creamy Mexican Chicken

Serving size: 1 breast and 1 c sauce
List of Ingredients
- 2-4 oz chicken breasts, boneless, skinless
- 1 1/2 c salsa
- 1 package taco seasoning mix
- 6 oz FF sour cream
- 1/4 c RF Mexican cheese, grated
- Pam cooking spray
Instructions
- Mix salsa, sour cram and taco seasoning. Set aside. Preheat oven to 400°.
- Pound chicken breasts thin and place in Pam-sprayed oven-proof skillet. Cook until almost done over medium heat.
- Add salsa mixture and continue to cook for 5 minutes or until chicken is cooked through.
- Sprinkle with cheese and place pot in oven to melt cheese.
- Use less taco seasoning for a milder dish.
