Southwest Chicken-Salad Wraps

List of Ingredients
- 1 c cooked skinless chicken breast, minced
- 1/4 c tomato, diced
- 1 T fresh lime juice
- 1 T roasted bell pepper, minced
- 1 T scallion, white portion only, minced
- 1 T cilantro, chopped
- 1 tsp fresh chives, minced
- 1/2 tsp salt
- 1/4 tsp garlic, minced
- 1/4 tsp jalapeno pepper, minced
- freshly ground pepper to taste
- 4 (8 inch) FF flour tortillas
Instructions
- Combine the chicken, tomato, lime juice, bell pepper, scallion, cilantro, chives, salt, garlic, jalapeno, and pepper in a bowl. Cover and refrigerate at least 2 hours or up to 2 days.
- Divide the chicken mixture among the tortillas and roll up. Wrap tightly in plastic wrap and refrigerate at least 20 minutes or up to 2 hours. Cut each sandwich in half before serving.
