Chicken and Ziti Bake

List of Ingredients
- 1/2# chicken breast, boneless, skinless, cut into strips
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1-28 oz can crushed tomatoes
- 1/2 tsp pepper
- 1 tsp Italian seasoning
- 2 c ziti or penne pasta
- 2/3 c FF ricotta
- 1/3 c mozzarella, grated
- 2 T parmesan cheese
Instructions
- Brown chicken in skillet. Set aside
- Cook onion and garlic until softened in skillet, about 5 minutes. Add tomatoes, pepper and Italian seasoning; bring to a boil. Reduce heat and simmer until thickened, about 10 minutes.
- Cook pasta. Drain and mix with ricotta.
- Layer: 1/2 tomato mixture, ziti, chicken, tomato mixture, mozzarella, parmesan in 13x9 pan. Bake at 375° for 15-20 minutes.
Final Comments
Tried it, but wasn't overly impressed. I actually found it to be a bit bland, as did DH. Next time I think I will add lots more garlic and maybe some basil.
