    Yields 4 servings at 7 points each
    Serving size: 1/4 pan

    List of Ingredients


    • 1/2# chicken breast, boneless, skinless, cut into strips
    • 1 onion, chopped
    • 2 cloves garlic, chopped
    • 1-28 oz can crushed tomatoes
    • 1/2 tsp pepper
    • 1 tsp Italian seasoning
    • 2 c ziti or penne pasta
    • 2/3 c FF ricotta
    • 1/3 c mozzarella, grated
    • 2 T parmesan cheese


    Instructions


    1. Brown chicken in skillet. Set aside
    2. Cook onion and garlic until softened in skillet, about 5 minutes. Add tomatoes, pepper and Italian seasoning; bring to a boil. Reduce heat and simmer until thickened, about 10 minutes.
    3. Cook pasta. Drain and mix with ricotta.
    4. Layer: 1/2 tomato mixture, ziti, chicken, tomato mixture, mozzarella, parmesan in 13x9 pan. Bake at 375° for 15-20 minutes.


    Final Comments


    Tried it, but wasn't overly impressed. I actually found it to be a bit bland, as did DH. Next time I think I will add lots more garlic and maybe some basil.
