Velveeta Cheesy Breakfast Bake

6 - slices bread, cut into, cubed
1 - 16 oz - breakfast sausage, cooked & crumbled
2 - cups shredded Velveeta or shredded cheddar cheese
1/2 - small onion, chopped
1/4 - cup chopped green peppers, optional
8 eggs, beaten
2 - cups milk
1/8 - teaspoon salt
pepper to taste

Spray a 13x9 inch baking dish lightly with non stick spray. In a large bowl add the cubed bread cooked sausage, shredded cheese, onion and green pepper if using.
Lightly toss and set aside. In a separate bowl add the egg and milk and whisk together.
Pour the egg mixture over the bread mixture and mix to combine. Pour into a greased 13x9x2 baking dish. Sprinkle with salt and pepper to taste.
Bake uncovered, at 350 degrees for 1 hour or until a knife inserted near the center comes out clean. Let stand for 5 minutes before serving.
Cook's Note: 2 cups shredded cheddar cheese can be substituted for Velveeta cheese. This recipe can easily be cut in half and baked in a 8x8 inch baking pan. Bake 30-40 minutes for a half recipe.
Overnight Method: Assemble the casserole the night before and cover with foil. Place in the refrigerator overnight. In the morning uncover casserole and let stand at room temperature for 30 minutes. Bake according to directions above.
