    1 CUP LIGHT BROWN SUGAR

    ½ CUP SOFTENED BUTTER

    1 TSP VANILLA

    1 EGG

    1 ¾ CUPS FLOUR

    1 TSP CINNAMON

    ½ TSP SALT

    ½ TSP BAKING POWDER

    1 CUP FINELY DICED RHUBARB

    PREHEAT OVEN TO 375 – IN A LARGE BOWL CREAM TOGETHER BROWN SUGAR, VANILLA, BUTTER & EGG. MIX IN FLOUR, CINNAMON, SALT, BAKING SODA AND BAKING POWDER. BEAT WELL UNTIL A DOUGH FORMS. ADD RHUBARB & BEAT AGAIN.

    FORM 1 INCH BALLS & BAKE ON LIGHTLY GREASED OR PARCHEMNT LINED COOKIE SHEET 12-14 MINUTES. LET COOKIES REST ON BAKING SHEET ANOTHER TWO MINUTES THEN TRANSFER TO A COOLING RACK.

    *SIDE NOTE – I BOUGHT A 7 OZ BAG OF FROZEN RHUBARB TO USE & IT WAS JUST THE RIGHT AMOUNT FOR A DOUBLE BATCH.
