Cottage Potatoes

1 large or family size pkg Ore-Ida shredded hash browns
1 stick butter
1 quart half and half (half milk/half butter)
salt and pepper, to taste (about 1/2 tsp. each)
1 tbsp. fresh chives or parsley
3 tbsp. grated Parmesan
In a large saucepan, melt butter. Pour off and reserve 1/4 cup. Add hash browns and half and half to pan. Cook for about 10 minutes, stirring well.
Pour mixture into a casserole dish. Sprinkle evenly with parsley or chives and Parmesan.
Bake at 375°F for about 40 minutes. Turn up the temperature to 400°F during the last 10 minutes if you prefer a crust
