dinner as it is simple and can be prepared ahead of time. Unlike plain mashed potatoes, it reheats easily and tastes just as good as the first time you baked it. Freezes well too.
This is a great potato dish to make for a big holiday
List of Ingredients
9 large potatoes
18 oz. softened regular or low fat cream cheese *
1 cup regular or low fat cream sour cream *
2 tsp. salt
2 tbs. butter
pepper
chopped chives, optional
paprika for sprinkling on top, optional
Recipe
* low fat cream cheese and sour cream taste great and produce good results when used in place of full fat, but DO NOT use fat free products as these are foul and you will regret it.
Cook and mash potatoes well.
Add all ingredients except chives.
Mash some more.
Stir in chives.
Place in greased casserole.
Bake uncovered for 30 min. in 350 oven (bake 1 hour from frozen)
