Recipe Introduction
I took this dictation-style in 2003 when I first did Weight Watchers. I tried it today and I liked it just fine. I did make substitutions so that is why it is still in the test queue. I need to make it 'as is' to see if it is just as good.
My husband thought it was weird, but he was expecting a cookie or cake. This actually is like the custardy center of a pumpkin pie. There is a nutty flavor to it due to the whole wheat filling. I really liked it, it was a satisfying fall snack.
My substitutions were using real sugar and real eggs. The directions gave it a points value of 1/2 point for sweet and low, or 1 point for using sugar, for 16 squares in a 9x9 pan. My calculations gave the recipe a total points value of
List of Ingredients
- 1 cup whole wheat flour (8 pts)
- 2 teaspoon baking powder ( 0 pts)
- 1/4 teaspoon salt (0 pts)
- 1/4 cup 1% milk (.75 pts-california milk)
- 10 packets sweet and low or 1/2 cup sugar (0 S&L, 7.5 sugar, 1 splenda)
- 1/2 cup egg substitute (2pts substitute or 2 eggs, 4 pts)
- 1 cup unsweetened applesauce (2 pts)
- 1 cup canned pumpkin (1 pt)
- 1/2 teaspoon cinnamon (0 pt)
- 1/2 teaspoon vanilla (0 pt)
- 1 teaspoon pumpkin pie spice (0 pt)
Instructions
- Combine Dry ingredients. Add milk, applesauce, pumpkin, vanilla, and egg. Handmix with spoon.
- spray 9x9 pan, bake at 350 for approximately 30 minutes or until a pielike consistancy. (a rectangular pan can be used as well)
- Let cool 5 to 10 minutes, then place in a pan of water until cool. Cut into squares, cover and refrigerate.

made with splenda and egg substitute: 14.75
made with sweet and low and egg substitite: 13.75

Be sure to cut in appropriate amount of squares. as you can see, 16 squares or 18 squares gives you a low points sweet snack.
