Jamie's Enchiladas
List of Ingredients
1 pound of ground beef or 3 chicken breasts
1 (19 oz.) Or 2 (10 oz.) Cans of Enchilada sauce
1 ½ cups of shredded cheese ( I used cheddar)
1 (12 count) package of Flour Tortillas for soft tacos (small ones are best)
Recipe
1. Heat oven to 400 degrees. Brown ground beef over medium high heat until thoroughly cooked; drain. If you use chicken boil first until done, then pre-heat oven. Stir in 3/4 cup of enchilada sauce and 1 cup of cheese into beef or chicken.
2. Spoon enchilada filling onto tortillas; roll up and place seam down in lightly greased 13x9x2 in. Baking dish.
3. Pour remaining enchilada sauce over top; sprinkle with remaining ½ cheese. Bake at 400 degrees for 14-20 minutes.
I usually use a little more cheese and enchilada sauce.
