Pickle Relish

List of Ingredients
- 10 c. cucumbers
- 2 c. green peppers (approx. 6 large)
- 2 onions, medium
- 4 c. celery
- 4 tbsp. salt
- 4 c. vinegar
- 2 c. water
- 4 c. sugar
- 1/2 tsp. tumeric
- 2 tbsp. mustard seed
Instructions
- Put cucumbers, green peppers, onion and celery through grinder. Cover with 4 tbsp salt. Let stand overnight.
- Drain well. Boil in 2 c. vinegar and water for 10 minutes. Drain.
- Boil 2 c. vinegar, sugar, tumeric and mustard seed. Add relish. Bring to a boil.
- Seal in sterilized jars.
Final Comments
Makes 3 1/4 quarts or 6 1/2 pints.
