ARTICHOKE, SPINACH & CHEESE DIP

List of Ingredients
2 (8 oz.) pkg Cream Cheese (room temperature)
2 cans (14 oz.) Artichoke Hearts, (drained & patted dry)
2 (10 oz.) pkg. frozen chopped Spinach (drained & squeezed dry)
2 cups Monterey Jack or Mozzarella Cheese shredded
2 cups Swiss Cheese shredded
1 cup Sour Cream (or you can use ½ Sour Cream and ½ Mayo) (Optional)
Recipe
Beat with mixer or stir Cream Cheese until smooth.
In Food Processor or Blender chop Artichokes fine.
Stir all ingredients together & put in baking dish sprayed with non-stick spray.
Sprinkle some of the grated cheese (either one or both) on top OR sprinkle with Parmesan.
Cover & Bake at 350 for 20-25 minutes, then remove cover & bake 5-10 min to brown edges a little.
Serve with tortilla chips, crackers or bread for dipping. Enjoy!
Also serves great as a rich and creamy side dish!
Note: You can add chopped, cooked shrimp to this (about 1/4 - 1/2 lb) or 1 can crab meat, drained & rinsed well).
