    Prep time: about 20 min.
    Cook time: about 2 and 1/2 to 3 hrs

    List of Ingredients




    1 lb. beef tips (or a cut up round or chuck steak)
    1 pkg. beef stew seasoning mix
    3 medium potatoes, washed, peeled, and cubed into bite sized pcs.
    1 cup baby carrots (whole or cut up)
    1 stalk of celery washed & cut in 1/2" slices, or chunks
    1 med. onion, peeled & cut into chunks
    1 handful of washed, quartered or sliced mushrooms (or 1 small jar or can)
    Water and/or beef bouillon or beef stock
    seasonings: salt, pepper, garlic powder
    Optional: 3/4 cup peas or green beans (canned or frozen), paprika, bay leaf, italian seasoning

    Use a stock pot (about a 6 to 8 qt. capacity) on med. to med-high heat and brown the meat in 2 TB oil. Follow directions on the beef stew seasoning packet - usually you will brown the meat, drain grease, add seasoning and 2 to 3 cups water, bring to a simmer, cover and turn heat down to low or med-low for about 45 min to 1 hour (check to make sure it's not sticking or boiling dry - if so, stir occasionally, lower the heat, and add a little more water). Add the vegetables and enough water (or beef stock) to cover the vegetables, and return to a simmer. Cover and simmer on med-low heat for another hour, stirring/checking occasionally. If using peas or green beans, add them at the last 10 minutes of simmering. Test the veggies for doneness, the meat for tenderness, and taste-test to see if you need more seasoning. Add more seasoning or water if needed, and cook a little longer if needed. (a little extra cooking time on low heat will add more flavor, but too long will make the vegetables mushy)

    Serve with a salad and bread (french bread, garlic bread, biscuits, or cornbread). Makes great left-overs. A great cold weather meal.

    TIPS:
    USE A TIMER (so you don't forget and burn things).
    Check on things frequently (but remember every time you lift the lid, it adds cooking time).
    Make sure you have all the ingredients before you start.
    If you havent used leftovers in 2-3 days, throw them out.
