    1 quart milk (4 cups)
    2 T salt
    3/4 cup sugar
    1 cup butter

    1/4 cup of warm water
    2 packages of yeast (4 1/2 tsp)
    12 cups of flour

    Heat milk, salt, sugar and butter and bring almost a boil (scald). Then let the mixture cool to room temperature (the best thing to do is mix this in the morning and let set on stove for 3 to 4 hours to cool).

    When mixture is cool, combine warm water (1/4 cup) and 2 packages of yeast. Then add this to the mixture with 2 eggs. Then start whipping the mixture and adding flour. It needs 12 cups of flour. Start mixing with a spoon, whne that gets hard, start to work it in with your hands. Then move to a floured surface and knead the dough until it is smooth.

    Beckie normally starts with 10 cups of flour and then when kneading the dough the other 2 cups gets worked in. Once dough is smooth, set in a big bowl that is buttered and let raise to twice the size.

    Then ready to twist and bake. Use a combination of 1 quart water and 1 T of lye to dip the pretzels in before baking. Bring this mixture to a boil, dip pretzel in and bake. Use a heavy baking pan or better yet she found if you use parchment paper on the pan that helps them from sticking too. Sprinkle pan with salt after the "lye bath" and bake at 450 degrees for 8-10 minutes.
