    List of Ingredients


    • 1 1/2 quarts water
    • 1 medium head califlower, separated into florets (about 5 cups)
    • 1 clove garlic, peeled (optional)
    • 1/4 c Light mayo or nayonase
    • 1/4 tsp salt
    • 1 TBL chopped fresh basil leaves (optional)


    Instructions


    1. In a 3 quart sauce pan, bring water to a boil. Add califlower and garlic. Cook covered for 15 min or until florets are tender. Drain.
    2. In a food processor or blender, process cauliflower, garlic, mayo and salt until creamy, scraping down sides as needed.
