    List of Ingredients


    • 2 1/2 cup all purpose flour
    • 1 1/4 cup sugar
    • 1 Tbsp. cinnamon
    • 1 tsp. baking soda
    • 1 tsp. baking powder
    • 1/2 tsp. salt
    • 1/2 cup cooking oil
    • 1/2 cup milk
    • 3 beaten eggs
    • 1 Tbsp. vanilla
    • 2 cups shredded carrots
    • 1 cup chopped nuts


    Instructions


    1. Combine cinnamon, soda, baking powder, and salt.
    2. Combine oil, milk, eggs, and vanilla.
    3. Add to flour mixture and stir just until combined.
    4. Stir in carrots and nuts.
    5. Pour into 2 greased loaf pans.
    6. Bake at 350 degrees for 40-50 minutes.
    7. Remove from pan and cool on wire rack.
    8. Wrap and store overnight.
