Carrot Bread

List of Ingredients
- 2 1/2 cup all purpose flour
- 1 1/4 cup sugar
- 1 Tbsp. cinnamon
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup cooking oil
- 1/2 cup milk
- 3 beaten eggs
- 1 Tbsp. vanilla
- 2 cups shredded carrots
- 1 cup chopped nuts
Instructions
- Combine cinnamon, soda, baking powder, and salt.
- Combine oil, milk, eggs, and vanilla.
- Add to flour mixture and stir just until combined.
- Stir in carrots and nuts.
- Pour into 2 greased loaf pans.
- Bake at 350 degrees for 40-50 minutes.
- Remove from pan and cool on wire rack.
- Wrap and store overnight.
Final Comments
Makes 2 loaves.
