    List of Ingredients


    • 1 1/4 cup flour
    • 1 1/4 cup sugar
    • 1 cup mashed bananas
    • 1/2 cup shortening
    • 5 Tbsp. buttermilk
    • 3 eggs
    • 1 cup nuts
    • 1 tsp. vanilla
    • 1 tsp. salt
    • 1 tsp. baking soda
    • Filling ingredients:
    • 1 1/2 cups milk
    • 2 Tbsp. cornstarch ( or 4 Tbsp. flour)
    • vanilla
    • 4 egg yolks
    • 1/2 cup sugar
    • 1/2 cup chopped nuts


    Instructions


    1. Cream shortening.
    2. Add 1 1/4 cup sugar and continue mixing.
    3. Add 3 eggs and beat until creamy.
    4. Sift flour, then sift again with salt and soda.
    5. Add alternately with butter.
    6. Beat until smooth.
    7. Add bananas and 1 cup nuts.
    8. Pour in 2 greased and floured 8 or 9 inch layer pans.
    9. Bake at 375 degrees until toothpick inserted in the middle comes out clean.
    10. Filling directions:
    11. Mix sugar and cornstarch.
    12. Add to milk.
    13. Cook in double broiler until mixture starts to thicken.
    14. Beat egg yolks.
    15. Add small amount of hot mixture to yolks.
    16. Add yolk mixture to milk mixture and continue cooking until thick.
    17. Remove from heat and add vanilla and nuts.
    18. Spread over cake.
