Banana Nut Cake

List of Ingredients
- 1 1/4 cup flour
- 1 1/4 cup sugar
- 1 cup mashed bananas
- 1/2 cup shortening
- 5 Tbsp. buttermilk
- 3 eggs
- 1 cup nuts
- 1 tsp. vanilla
- 1 tsp. salt
- 1 tsp. baking soda
- Filling ingredients:
- 1 1/2 cups milk
- 2 Tbsp. cornstarch ( or 4 Tbsp. flour)
- vanilla
- 4 egg yolks
- 1/2 cup sugar
- 1/2 cup chopped nuts
Instructions
- Cream shortening.
- Add 1 1/4 cup sugar and continue mixing.
- Add 3 eggs and beat until creamy.
- Sift flour, then sift again with salt and soda.
- Add alternately with butter.
- Beat until smooth.
- Add bananas and 1 cup nuts.
- Pour in 2 greased and floured 8 or 9 inch layer pans.
- Bake at 375 degrees until toothpick inserted in the middle comes out clean.
- Filling directions:
- Mix sugar and cornstarch.
- Add to milk.
- Cook in double broiler until mixture starts to thicken.
- Beat egg yolks.
- Add small amount of hot mixture to yolks.
- Add yolk mixture to milk mixture and continue cooking until thick.
- Remove from heat and add vanilla and nuts.
- Spread over cake.
