Fudge Nut Cake

Recipe Introduction
She used to make this cake countless times as her donation to sell at the concession stand at basketball games in Adrian, Tx. She always doubled the recipe and didn't always add nuts. Mike and Bill (April's uncle and dad) complained about having to buy a piece of their mother's cake.
List of Ingredients
- 1 1/4 cups sifted flour
- 1 1/4 cups sugar
- 2 tsp. baking powder
- 3/4 tsp. salt
- 6 Tbsp. cocoa
- 1/3 cup high grade shortening
- 1/2 cup milk
- 1 tsp. vanilla
- 1/2 cup chopped nuts
- 2 eggs
- Fudge frosting ingredients:
- 1/3 cup margarine
- 6 Tbsp. cocoa
- speck of salt
- 3 cups powdered sugar
- 1/4 cup milk or cream
- 1 1/2 tsp. vanilla
Instructions
- Sift together flour, sugar, baking powder, salt, and cocoa.
- Add shortening and milk.
- Beat for 2 minutes and add 2 eggs.
- Add 1/4 cup more of milk.
- Beat for 2 minutes.
- Fold in vanilla and nuts.
- Bake in square 9 X 9 X 2 greased and floured pan for 30-35 minutes at 350 degrees.
- Frosting directions:
- Thoroughly cream margarine, cocoa, salt, and 1 cup of powdered sugar.
- Add alternately 2 cups additional powdered sugar and 1/4 cup milk or cream.
- Beat until VERY smooth.
- Add vanilla.
- Spread on cooled cake.
