    Poppy Seed Cake

    List of Ingredients


    • 3/4 cup poppy seed
    • 3/4 cup milk
    • 1 1/2 cup sugar
    • 1 1/2 tsp. vanilla
    • 3/4 cup margarine
    • 2 cups flour
    • 2 tsp. baking powder
    • 4 egg whites
    • Filling ingredients:
    • 1 1/2 cup milk
    • 2 Tbsp. cornstarch dissolved in 1 1/2 Tbsp. milk
    • 1/2 cup chopped nuts
    • 1/2 cup sugar
    • 4 egg yolks
    • vanilla


    Instructions


    1. Soak poppy seed in milk for 2 hours.
    2. Sift flour and baking powder together.
    3. Cream sugar and butter thoroughly.
    4. Add milk/poppy seed mixture. Add vanilla.
    5. Beat egg whites until stiff peaks form. Then fold into cake batter by hand.
    6. Bake at 350 degrees until done.
    7. Filling instructions:
    8. Put dissolved cornstarch in top of double broiler with milk.
    9. Cook over boiling water until smooth.
    10. Cream egg yolks and sugar.
    11. Add hot milk gradually.
    12. Stir constantly. Then return to stove over boiling water.
    13. Cook until custard coats the spoon, stirring constantly.
    14. Add vanilla and nuts.
    15. Let cool slightly then frost the cake.
