Raisin Pecan Pie

List of Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 cup raisins (can use 1/2 cup raisins and 1/2 cup coconut)
- 1 cup coarsely chopped pecans
- 1 tsp. vanilla
- 1 or 2 tsp. white vinegar
- flaky pastry - recipe to follow
Instructions
- Cream butter. Gradually add sugar, beating well at medium speed.
- Add eggs one at a time, beating well after each addition.
- Stir in raisins, or raisins and coconut, pecans, vanilla, and vinegar.
- Pour into flaky pastry shell.
- Bake at 350 degrees for 40-45 minutes or until set.
Final Comments
Yield: one 9 inch pie.
