    Cheesy Chicken Enchiladas

    List of Ingredients


    • 3 oz. cream cheese
    • 1 Tbsp. milk
    • 1/2 tsp. salt
    • 1/4 tsp. cumin
    • 2 to 2 1/2 cups cooked, chopped chicken
    • flour tortillas (10 to 12)
    • 1 can cream of chicken soup
    • 8 oz. sour cream
    • 1 cup milk
    • 8 oz. Colby Jack cheese, shredded


    Instructions


    1. Combine the first 5 ingredients in a bowl until well blended.
    2. Place some of the mixture in each tortilla and roll up.
    3. Place them in the bottom of a lightly greased baking dish.
    4. Combine soup, sour cream, and milk.
    5. Pour over tortillas.
    6. Cover with the cheese.
    7. Cover with foil and bake at 350 degrees for 30 minutes or until cheese melts.
