Chicken Enchilada Casserole

List of Ingredients
- 3 lb. chicken
- 13 oz. Doritos
- 1 lb. velveeta, thin sliced
- 1 sm. onion, chopped
- 1 can green chilies, chopped
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 1/2 cup broth (from chicken)
- salt and pepper to taste
- 2-3 Tbsp. margarine
Instructions
- Boil, debone, and shred chicken.
- Crunch Doritos.
- In 2-quart saucepan, saute onions and green chilies in margarine until soft.
- Add soups and chicken broth.
- Stir often and bring to a boil.
- Remove from heat.
- In 9 X 13 inch pan, layer 1/2 Doritos and 1/2 chicken.
- Cover well with approximately 1/2 soup mixture and 1/2 cheese.
- Repeat, covering well, all dry areas with soup mixture.
- Bake at 350 degrees until cheese melts and browns.
- Garnish with picante sauce or green chili sauce (optional).
