Garden Vegetable Pie

List of Ingredients
- 2 cups chopped fresh broccoli or sliced cauliflowerets
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 cup shredded cheddar cheese
- 1 1/2 cup milk
- 3/4 cup biscuit baking mix
- 3 eggs
- 1 tsp. salt
- 1/4 tsp. pepper
Instructions
- Lightly grease a pie plate (10 inches).
- Heat 1 inch of salted water (1/2 tsp. salt to one cup boiling water).
- Add broccoli.
- Cover and heat to boiling. Cook until almost tender.
- Drain. Mix broccol, onion, green pepper, and cheese in pie plate.
- Beat remaining ingredients until smooth.
- Pour into pie plate.
- Bake until golden brown at 400 degrees (35-40 minutes).
- Let stand for 5 minutes before cutting.
