List of Ingredients
- 1 lb. ground beef or ground turkey
- 2 tsp. chili powder
- 1 chopped onion
- corn or flour tortillas
- 1 can enchilada sauce
- 8 oz. grated cheddar cheese
- lettuce
- tomatoes
Instructions
- Brown meat with chili powder and onions.
- Heat tortillas in microwave for 30 seconds to soften.
- Put approximately 2 Tbsp. meat in tortilla and roll up.
- Place close together in greased baking pan.
- Pour enchilada sauce over top.
- Top with cheese and chopped onions.
- Bake in oven for approximately 10 minutes to melt cheese.
- Finely chop lettuce and tomatoes.
- Put on top immediately after removing from oven.
Final Comments
Serve with rice, chips, and salsa.
