Recipe Introduction
This recipe is from a San Luis Valley cookbook that Elaine (April's great-aunt) sent Louise. Elaine's daughter and husband raise potatoes on their San Luis Valley farm in Colorado.
List of Ingredients
- 2 lbs. hamburger meat
- 2 Tbs. finely chopped onion
- salt and pepper to taste
- 2 cans cream of mushroom soup
- 1 cup grated cheese
- 3 potatoes, peeled and sliced
Instructions
- Mix the raw hamburger with onion, salt, and pepper.
- Press into a 13 X 9 casserole dish and cover with soup.
- Sprinkle grated cheese on top of soup and arrange sliced potatoes on top of cheese.
- Bake at 350 degrees for 1 to 1 1/2 hours or until potatoes are tender.
Final Comments
Serves 6 to 8.
