Tamale Pie

List of Ingredients
- 1 lb. ground meat
- 1 onion
- 1 Tbsp. chili powder
- 1/2 cup bell pepper
- salt to taste
- black pepper
- 1 can tomato soup
- 1 can whole kernel corn
- 1 cup water
- Topping ingredients:
- 1 egg
- 1/2 cup milk
- 1/4 tsp. salt
- 1 1/2 tsp. baking powder
- 1 Tbsp. sugar
- 1 Tbsp. flour
- 1/2 cup meal
Instructions
- Saute ground meat, onion, and bell pepper.
- Add salt, pepper, and chili powder.
- Mix well.
- Add tomato soup, corn, and water.
- Simmer approximately 30 minutes or until most liquid is cooked out.
- In bowl, beat egg. Add milk and mix well.
- Add salt, baking powder, sugar, flour, and meal.
- Stir well until smooth. (She finds it helps to get the lumps out if she lets the topping set a few minutes and then goes back and stirs again.)
- Use 2 quart or 9 X 13 baking dish.
- Spray with non-stick cookiing spray.
- Pour meat mixture into bowl.
- Spoon topping over mixture.
- Bake at 350 degrees for approximately 30 minutes or until topping is lightly browned and meat mixture is bubbly around edges.
