Recipe Introduction
This is a recipe of Holt Perry's mother.
List of Ingredients
- 1 med. diced onion
- 2 lbs. lean ground beef
- 1 minced garlic clove
- 1 - 16 oz. jar taco sauce
- 1 - 10 oz. can chicken with rice soup
- 1 can cream of mushroom or cream of celery soup
- 1 - 4 oz. can chopped green chilies
- 1 - 6 oz. can tomato paste
- salt and pepper to taste
- corn tortillas
- 1/2 lb. grated cheddar cheese
Instructions
- Saute onions in on Tbs. cooking oil.
- Add ground beef and cook until brown.
- Drain off excess grease, then add taco sauce, garlic, both soups, green chilies, tomato paste, salt, and pepper.
- Simmer for 15-20 minutes.
- Place 1/2 mixture in large baking dish.
- Add a layer of tortillas, then add remainder of beef mixture.
- Top with layer of cheese.
- Cover and bake for 30-40 minutes at 350 degrees.
Final Comments
Serves 10. This recipe can be frozen without the cheese. When ready to use, thaw. Add cheese and cook normally.
